Potato and Cheese Flautas


I don't remember where I got this recipe. Maybe in YouTube or in TLC (cable channel). I love watching cooking shows and taking down recipes in my recipe notebook. Today, I ran out of ideas on what to prepare for KS so I just checked my recipe notebook. He needs some energy before jogging and I don't want him to feel so hungry before dinner.


I chose this because it  is easy to cook. In this version, I used boiled potatoes mixed with sauted onions, whole kernel corns, green peas, basil, salt and pepper. Potatoes are usually included in every Indian snack so I have a few ready boiled potatoes in the fridge. Instead of burritos, I used Tortillas in chili and jalapenos flavor.  I also used grated mozzarella cheese instead of Feta and ricotta. The recipe is originally Mushroom and Cheese flautas but I got to experiment on whatever is available in the kitchen.






Here's the original recipe:

1. In a pan, saute  minced garlic, minced onion , red chili (optional) , dill, thyme, shitake mushroom - diced, salt and pepper.
2. In a bowl, place Feta cheese and ricotta. Add the sauted mushrooms and mix. Season with pepper.
3. Fill in taquitos/ burritos wrap with the mushroom filling.
4. Roll and secure with toothpick on the sides. For me, I sealed it with just water.
5. Fry in a pan and serve.


You can use other fillings like -
- Shrimps, oregano , garlic, lime zest, jalapeno, chili
- Sweet potatoes, oregano, chili.
